The cave by Chef Ryan Clift, one of Bali’s most immersive and innovative fine dining destinations, is proud to announce the launch of its highly anticipated new menu, available from 26 May 2025.
This latest evolution of The cave’s multi-sensory culinary experience features a carefully curated selection of refined dishes that highlight creative techniques, global inspirations, and exceptional ingredients.



We’re constantly pushing the boundaries of what fine dining can be, and with Chef Nikhil now leading our kitchen, guests can expect even more innovation, precision, and playfulness on the plate.

At the heart of the new menu are standout creations that balance artistry and bold flavours, showcasing the best of the best from our past menus over the last 2 years.
- Mussel Tempura – Elevated with parsley and a delicate marinière velouté, offering a modern twist on a classic coastal delight.
- Foie Gras Cheesecake – A decadent harmony of foie gras, strawberry, pistachio, yogurt, and a whisper of 8-spice — both indulgent and unforgettable.
- Toothfish à la Viennoise – Perfectly prepared toothfish accompanied by white bean, fennel purée, and a fragrant pastis emulsion.
- Olive Oil Sorbet – A refreshing interlude with notes of yuzu, thyme, and gin — crisp, herbaceous, and utterly unique.
